Our Chalk Hill Chardonnay greets the palate with a vibrant burst of acidity, gracefully giving way to a smooth, caramel-kissed finish that beckons another sip. Layers of white peach, Honeycrisp apple, and a touch of citrus zest unfold with poise and precision, offering both freshness and depth. There’s a quiet elegance in its balance—a seamless dance between bright fruit and subtle richness. While beautifully expressive now, this Chardonnay will continue to evolve, revealing even greater nuance with time.
Our Chardonnay is sourced from the Sonoma Foothill Vineyard in the Chalk Hill AVA in Windsor. Our block contains Dijon clones 76, 95, and 96. After harvest, the fruit was sorted, then pressed whole-cluster using a Vaslin Bucher Bladder press for minimal oxygen exposure.
After pressing, the juice was cold-settled for three days, then inoculated with a proprietary yeast blend, and fermented in 50% new and 50% once-used French oak barrels. The wine also went through a partial malolactic conversion and was stirred sur lies to enhance the structure and body.
